Umehachi uses a special cooking technique (vacuum low-temperature cooking). By vacuum-packing meat and slowly applying heat at a low temperature of 58 to 68 degrees Celsius, which denatures the protein, the meat retains its moisture and the meat turns slightly pink, and becomes softer and more flavorful.
